Healthy sunday lunch

Hello!! Well thank you for all your lovely messages yesterday, I'm so glad you liked that little hoop too!! It is rather small, but very cute! I put some glue on a spare bit of fabric this morning and will try using nail polish remover to see if that works tonight... fingers crossed! Otherwise I might have to resort to adding a cloud or sun somehow!!!

So, onto today's post. Food. Sunday food. But I'm afraid this isn't a roast. So no recipe for healthy roast potatoes here (is there such a thing anyway?!). Rather an alternative.


And I give you my word this is totally and absolutely delicious. The best thing about it too, it's ridiculously easy to make. Easy ingredients, easy prep. And easily doubled too. Here goes:

Ingredients (for 2):
  • tin chopped tomatoes
  • 2 cloves of garlic, finely chopped
  • large tablespoon of green olives
  • large tablespoon of black olives
  • tablespoon of capers
  • 2 fillets of frozen (or fresh if you have it) haddock

Method:
  • Pre-heat the oven to 200C.
  • In a baking tin, add a swirl of olive oil, the garlic, tomatoes, olives and capers. Mix everything and put in the oven for 15min.
  • When the 15min are up, place the fish on top, add a grind of black pepper and put in the oven for another 15-20min (until the fish is cooked)
  • Scatter with fresh basil leaves and serve with brown rice
  • Best enjoyed with a lovely crisp white wine ;-)
We had this for lunch last Sunday, but it could easily be done on a school night too. It is a rather stunning dish, although the ingredients are really simple. All the flavours complement each other without taking over, it's just perfect. It certainly made us very happy indeed!! x

It all sounded so good until I read that you'd included the demon olives! Noooooooo.

Put them in a soup and you might just kill me.

Ah, makes me think of being on holidays on the Cote d'Azur. Well, not the haddock but the tomatoes + olives, definitely!...
Now, I'm going to dream of dry heat, pastis and warm blue sea... *sigh*

It looks lush and sounds so simple...people don't realise but frozen fillets are often fresher than those on the counter...so I imagine the taste was very good!!! xxx

I used to make a very similar dish to this until I bought some fish that looked delicious but when cooked tasted like death...I was very sick afterwards and never made the dish again...but I think absolutely deee-licious yours looks I'll try it again and will definitly use frozen fish!
